The original Xbox couldn't (can't) have both component video and digital audio output at the same time via official cables/adapters. My question is: are there any third-party cables/adapters which permits the Xbox to have component video and digital audio output at the same time?

Are you sure? I thought the Xbox HD kit (or whatever it was called) had a cable with component and optical out...Component video output and digital audio output for the original Xbox ?
It did. The official HD kit (and not a 3rd party cable, which it sounds like you have) had a big box that hooked into the back of the xbox and that box had component video ports, an optical port, and r/w analog audio out. I still have mine and if you live in chicago I'll give it to you for free.
Both Xbox HD AV kits have component cables and a Toslink optical digital audio port.
What's the difference between the two, you ask? One of them looks like a breakout box. The other is a stream of thick cables, with the optical port on the Xbox AV connector end.
